Olive oil                                         2 tbsp

Onion diced                                  1 large

Beef mince                                    500g

Garlic gloves                                   2

Jalapeno                                       10g

Tomato paste                                1 tbsp

Tomato diced                                1 cup

White beans                                  1 x 425g can rinsed

Parsley chopped                           2 tbsp

Salt & Pepper                                To taste

Tortillas                                            6


Sour cream                                     3 tbsp

Sliced spring onion                        2 tbsp

Snow pea sprouts                          1 tbsp

Frenchmaid Tomato Salsa          1/2 cup

Prep: 30 Min |Makes  6

Heat the olive oil in a shallow pan over a medium heat, add the onion and garlic and cook for a few minutes, then stir in the beef mince and lightly brown.


Add the tomato paste, jalapenos and diced tomatoes, cook until the mixture becomes thick and creamy in texture, stir in the beans and parsley, season to taste.


To make the tortilla baskets, lightly oil each tortilla and push into a small stainless bowl to create a basket shape, bake in a moderate oven until crisp, make enough for your platter.  


Fill each basket with your nacho mix, top with sour cream, spring onion and the snow pea sprouts, arrange on your platter with a bowl of  Frenchmaid Tomato Salsa.
