Every country has its pub‑food icon, but loaded fries? That’s the universal champion. In Sweden, we call these “trucker fries.” Why? No clue, but it feels right. Hearty, salty, messy, indulgent… the kind of food that keeps you going or knocks you straight into a food coma. Either way, it's worth it.

This dish doesn’t pretend to be healthy. It’s here to deliver pure flavour with zero apologies. Remember the golden rule: Fat + Sodium = Flavour Town and if we’ve already accepted that our resting heart rate may spike just thinking about this bowl, we might as well do it properly.

Below is the breakdown - decadent, easy, and guaranteed to make any menu (or late‑night craving) a crowd‑pleaser.


Ingredients

  • Agria potato fries (1kg)

  • Bacon (60g, fried until crispy)

  • Cumin (5g)

  • Chicken breast (100g), diced

  • Spring onion (20g), sliced

  • Cilantro (10g), chopped

  • Cheddar cheese (75g), grated

  • Green apple (1), diced

  • Tomato (1), diced

  • Red onion (½), finely chopped

  • Confit garlic (30g)

  • Jalapeño (1), sliced

  • Extra virgin olive oil (30g)

  • Frenchmaid Sriracha Honey

  • Turkish or Greek yoghurt, unsweetened (60g)

  • Lemon (1)

  • Pink peppercorn (for finishing)

Prep time: 45 minutes


Method


1. Marinate the Chicken

Season diced chicken with cumin, a touch of olive oil, and salt. Mix in a small spoon of confit garlic for richness. Refrigerate while you prep the rest, quick marination, big flavour.


2. Cook the Fries

Fry or air‑fry Agria fries until golden, crisp, and irresistible. Salt immediately so it sticks.


3. Cook the Chicken

Sear marinated chicken in a hot pan until cooked through. Once it’s almost done, pile on the cheddar cheese and let it melt into a glossy, savoury web.


4. Fry the Bacon

Get the bacon crispy. No soft bacon allowed here — crunch is essential.


5. Build the Pico & Garnishes

Combine tomato, red onion, green apple, and jalapeño with a squeeze of lemon and a dash of olive oil. This adds freshness and acidity to cut through the richness.


6. Assemble Like a Champion

Load fries onto a plate or bowl. Top with cheesy chicken, crispy bacon, pico mix, and fresh cilantro. Drizzle generously with Frenchmaid Sriracha Honey and dollop yoghurt over top. Finish with crushed pink peppercorn for colour, fragrance, and a little heat.
