This isn’t your standard salmon fillet-it’s a bright, modern menu piece built for chefs chasing flavour impact with minimal prep time. Coated in a crisp sesame crust and finished with Frenchmaid Coriander, Ginger & Lime Dressing, this dish balances richness with zing, making it a standout for summer menus or light lunch service.

Ingredients
200g salmon fillets
Salt
¼ cup white sesame seeds
¼ cup black sesame seeds
4 tsp vegetable oil
Chives, finely sliced, to garnish
Method
1. Season & Prep
Preheat oven to 200°C. Lightly season both sides of the salmon with salt—this helps firm the flesh and enhances the final flavour.
2. Coat for Texture & Flavour
Set the Frenchmaid Coriander, Ginger & Lime Dressing in one shallow dish and combine the white and black sesame seeds in another. Press the salmon into the dressing first, ensuring full coverage, then into the sesame seeds to create an even crust. Transfer to a lined tray and drizzle the tops with vegetable oil for a golden finish.
3. Bake & Crisp
Bake for 10 minutes. Switch to broil/grill on high for 3 minutes to set the sesame crust and develop colour. (Alternatively, bake for an additional 5 minutes at 220°C if a grill isn’t available.)
4. Rest & Finish
Remove from the oven and rest for 3 minutes to allow the juices to settle. Garnish with chives and finish with a fresh drizzle of Frenchmaid Coriander, Ginger & Lime Dressing for brightness and sheen.
